Molasses Oatmeal Cookies

These Molasses Oatmeal Cookies have the best and chewiest oatmeal cookie texture! They have the best flavor that just screams fall and will be loved by everyone who tries them! Plus, you can’t go wrong with oatmeal cookies!

First, preheat the oven to 350F and line two baking sheets with parchment or silicone mats! This recipe makes 24 cookies! Beat together the coconut oil, white sugar, and brown sugar!

Coconut oil makes these cookies so soft and gives them the perfect chewy texture while also keeping the cookies completely nut free, because some vegan butters are made with a base of nuts or other allergies.

We use both brown and white sugar because the brown sugar helps keep the cookies moist and gives them flavor, while the white sugar helps them hold they’re shape and not spread too much! If you prefer to use unrefined sugar, you could try replacing one or both of the sugars with coconut sugar or date sugar, it should work out fine!

Next, add in the molasses, vanilla extract, and applesauce! Molasses is the key ingredient to these cookies, and helps give them their amazing flavor and soft and moist texture!

It’s one of my favorite baking ingredients and just screams fall! Vanilla helps give the cookies more depth of flavor, and the applesauce, while it may appear to be an odd ingredient, actually helps bind the cookies together! Without it, the cookies would be flat and lacy, so it’s very important to the texture of the cookies!

Once all the wet ingredients are beat together, in a separate bowl, whisk together the flour, oats, baking powder, baking soda, ginger, salt and cinnamon! I used both baking powder and baking soda because it helps make the cookies tall, giving them the best chewy texture.

The combination of spices makes these cookies unique, but the ginger really stands out and shines through, giving a little kick to these oatmeal cookies! Then, add in the dry ingredients into the wet and beat together! Scoop the dough onto cookie sheets and bake for 10-12 minutes! Cool and enjoy!

Molasses Oatmeal Cookies

  • 1/2 cup coconut oil (room temperature)
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1/3 cup molasses
  • 1/3 cup applesauce
  • 1 teaspoon vanilla extract
  • 2.5 cups flour
  • 2/3 cup oats
  • 2 teaspoons ginger
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1 teaspoon salt

2. Add in the molasses, vanilla extract and applesauce. In a separate bowl, whisk together the flour, oats, ginger, baking powder, baking soda, cinnamon, and salt.

3. Pour the dry ingredients into the wet and beat together. Scoop onto the baking sheets and bake for 10-12 minutes. Enjoy!
