Chia Seed Citrus Muffins

Muffins are my favorite things to bake for a reason! They’re so fluffy, soft, and can pack so much flavor! These chia seed citrus muffins are no exception, and have the perfect lemon-orange flavor with the added texture and health benefits of chia seeds!

First, preheat the oven to 350F. Then, begin by whisking together the flour, baking powder, chia seeds, baking soda, and salt. Both baking powder and baking soda are both used in these muffins to make them super light and fluffy, the perfect muffin texture.

Chia seeds make these muffins hearty and give them texture! If you don’t like or don’t have chia seeds you can emit them or substitute them for poppy seeds! They would also be delicious!

Next, in a small bowl, whisk together the sugar, coconut milk, vegetable oil, flax eggs, vanilla, and the lemon and orange zest! Use any non dairy milk you’d like, including oat milk, almond milk, or soy milk!

You could also substitute the vegetable oil with canola oil, avocado oil, sunflower oil, coconut oil, or any other neutral oil! You could even try melted vegan butter, although it may change the taste of the muffins slightly.

The lemon and orange zest add the perfect flavor to these muffins! Use whatever citrus you can get your hands on! You could use just lemon or just orange zest, or even throw in some lime or grapefruit zest!

Whisk together those wet ingredients until they’re completely combined! Then, fold the wet ingredients into the dry ingredients, just until combined. If you over-mix, your muffins may turn out dense and chewy, instead of light and fluffy!

Once your batter is combined, scoop it into slightly greased muffin liners. Bake for 20-24 minutes. Cool, and enjoy!

Chia Seed Citrus Muffins

  • 2 cups flour
  • 1.5 teaspoons baking powder
  • 1 tablespoon chia seeds
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 3/4 cup coconut milk
  • 3/4 cup vegetable oil
  • 2 flax eggs (2 tablespoons ground flax seed mixed with 5 tablespoons water)
  • 1 tablespoon lemon zest
  • 1 tablespoon orange zest
  • 1 teaspoon vanilla extract

1. Preheat oven to 350F and line a muffin tin with liners. Start by whisking together the dry ingredients. In a small separate bowl, whisk together the wet ingredients.

2. Fold the wet ingredients into the dry ingredients, and then scoop into the muffin liners. Bake for 20-24 minutes, cool, and enjoy!
