Glazed Cinnamon Applesauce Muffins

These muffins are so soft and fluffy, with the perfect fruity flavor from the applesauce, combined with the amazing spices put in the batter!! Finished off with a smooth and sweet glaze, these muffins are so easy to make and simply to die for!

First, preheat the oven to 375F and line your muffin tin with paper liners! This recipe makes around 16 muffins! Then, in a large bowl, beat together the vegan butter and brown sugar.

Beat the vegan butter and brown sugar until light a fluffy, using an electric hand mixer or stand mixer. Then, add in the applesauce, flax eggs, and vanilla. You can use any type of applesauce you like! The flax eggs can be substituted with chia eggs or even 1/2 cup of vegan yogurt or sour cream.

Beat all the wet ingredients until combined. Then, add in the flour, baking powder, baking soda, cinnamon, and allspice to the same bowl. The combination of baking powder and baking soda helps make these muffins super fluffy, and the combination of spices pies perfectly with the applesauce!

Use your electric mixer to make sure the batter is mostly combined, before folding it together using a rubber spatula. Using a scoop or a large spoon, carefully divide the batter between your muffin tins. Bake in the oven for 17 minutes, cool, and enjoy!

Glazed Cinnamon Applesauce Muffins

  • 1/2 cup vegan butter
  • 2/3 cup brown sugar
  • 2 flax eggs (2 tablespoons ground flaxseed mixed with 5 tablespoons water)
  • 1 cup applesauce
  • 1/2 teaspoon vanilla
  • 1.5 teaspoon ground cinnamon
  • 1/2 teaspoon allspice
  • 1.5 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 2 cups flour

For the glaze:

  • 3/4 cup powdered sugar
  • 2 teaspoons water
  1. Preheat oven to 375F and line a muffin tin with paper liners. In a medium bowl, beat together the vegan butter and brown sugar until light and fluffy with an electric hand mixer.
  2. Add in the flax eggs, applesauce, and vanilla, beating until combined.
  3. Then add in the cinnamon, allspice, baking powder, baking soda, and flour. Beat with the hand mixer until just combined, and then fold together the batter to make sure no flour pockets remain.
  4. Scoop into the prepared pan using a spoon or large cookie scoop. Bake for 15 minutes.
  5. To make the glaze, combine the water and powdered sugar in a small bowl. Let the muffins cool before drizzling on the glaze! Enjoy!
