These cookies are a perfect summer treat, with a crunchy exterior due to a thick sugar coating, and a delicious sweet brown sugar cookie dough with an amazing pop of citrus through key lime zest mixed in. You won’t regret making these super simple cookies!

First, in a bowl whisk together the vegetable oil or melted vegan butter, flax egg, brown sugar, vanilla, and key lime zest. You can also use melted coconut oil instead of vegetable oil. The flax egg is made by mixing 1 tablespoon of ground flaxseed with 3 tablespoons of water.

Once whisked together, add in the flour, baking powder, baking soda, and salt and form together into a dough.

Then, use a cookie scoop to roll the dough into balls. Place in a thick sugar such as Demerara sugar (or brown sugar), cover to coat, and then place on a baking sheet.

Bake for 10-15 minutes, cool, and enjoy these amazing cookies!!
Brown Sugar Key Lime Cookies
- 1/2 cup vegetable oil (or melted vegan butter/coconut oil)
- 1 flax egg (1 tablespoon ground flaxseed with 3 tablespoons water)
- 1 cup brown sugar
- 1 teaspoon vanilla
- Zest of 3 key limes
- 1.25 cups flour
- 1/2 tsp salt
- 1/2 tsp baking powder
- 1/4 tsp baking soda
- Thick sugar (such as demerara) for rolling
- Preheat oven to 350F, whisk together the vegetable oil, flax egg, brown sugar, vanilla, and key lime zest.
- Add in the flour, salt, baking powder, and baking soda. Fold together until a dough is formed.
- Scoop into equal-sized balls, roll in the thick sugar, bake for 12 minutes, cool, and enjoy!
